Every Mid-Autumn Festival, the same small tragedy plays out in Singaporean homes. A beautiful mooncake goes on the plate, someone cuts it into quarters, and the result is a crumbly crust, a dragged lotus paste, and a salted egg yolk smeared across the cut.
Mooncakes are expensive and are often shared with guests, so presentation matters. The good news is that clean slices are easy once you know the trick, and most of it comes down to the knife.
A traditional baked mooncake has three very different textures:
A dull knife has to push hard to get through the filling. That pressure crushes the crust and drags the yolk. Snow skin mooncakes are softer but even stickier, and they tear if the knife hesitates.
A sharp, thin, smooth-edged knife. A chef knife, santoku, or petty knife all work well. Thinner is better because there is less blade to drag through sticky filling.
Avoid serrated knives. It feels like a bread knife should work, but serrations tear the crust and chew up the paste.
Avoid the plastic knife in the box. It's for convenience, not clean cuts.
For mixed nut (wu ren) mooncakes, use a slightly sturdier knife, since the nuts and candied fruit resist more.
For perfect quarters, make the first cut through the centre, rotate the plate 90 degrees, and cut again. For eighths, repeat on the diagonals.
Clean cuts show off the filling. Wipe the blade between every slice.
Snow skin is soft and sticky, so:
It is tempting to cut mooncakes straight on the serving plate. Ceramic and porcelain are much harder than knife steel, and even a few cuts can dull a fine edge noticeably. Use a cutting board, then transfer.
Cut on a wooden or plastic board, then move the slices to the plate.
We explain why in best cutting boards for keeping knives sharp.
A clean mooncake slice is one of those small details guests notice. Chill the cake, warm the blade, cut straight down, and wipe between every slice. Most importantly, use a knife that's actually sharp.
If your knife squashes a mooncake rather than cutting it, it's time for a sharpening before the festive season really gets going.
